Bacon Wrapped Scallops with a Sriracha Mayo
Bacon Wrapped Scallops
Defrost 1kg of scallops in your refrigerator, pat them dry with kitchen towel
Create a marinade of light soy sauce, brown sugar, orange juice, and orange zest
Marinate for a minimum of 30 minutes in a dish, but if you want to get this done a day ahead, they can also marinate overnight.
Wrap the marinated scallops in a strip of smoked streaky bacon and secure with a toothpick
Grill/Broil
Place the bacon-wrapped scallops on a hot grill and turn regularly to add colour, the bacon will keep the scallops moist and juicy, brush with any remaining marinade while cooking. You can also place it under a hot grill/broiler for around 8-10 minutes
Sprinkle with chopped chives and serve with a spice sriracha mayo (Mayonnaise, a teaspoon of sriracha, and a squeeze of lime juice)
