NY Style Chopped Cheese: A Bodega Classic

Ingredients:

  • 300g minced beef - go for the good stuff
  • 4 slices American cheese - for the melt
  • 2 slices tomato
  • 8 slices pickle
  • 2-4 leaves lettuce
  • 1/2 an onion, sliced
  • Salt & pepper
  • Vegetable oil

Bread and Condiments:

  • 2 burger buns, sliced
  • Butter - to toast the buns
  • Ketchup and mustard

Method:

  1. Toast the Buns: Place your nonstick pan on high heat and add some vegetable oil. Slather your buns with butter and fry them till they're crisp on the inside. Set them aside somewhere they can stay warm.

  2. Cook the Beef: Shape the minced beef into two balls. Toss them in the hot pan. Smash them flat like you mean it. Throw the onion slices on top of the meat so they get to know each other in the rendered fat.

  3. Flip and Chop: When it’s time, flip the patties, keeping the onions underneath. Once onion start to colour, grab your spatula and get chopping right there in the pan. You want finely chopped meat, fully cooked.

  4. Cheese It: When the meat’s ready, lay the cheese slices across the top. Cover the pan if you can. Give it a minute to turn the cheese into a gooey blanket.

  5. Build the Sandwich: Spread ketchup on the bottom bun. Stack up the lettuce, tomato, and pickles. Pile on the chopped cheese mix. Spread mustard on the top bun and cap it off.

  6. Wrap and Serve: If you’re feeling authentic, wrap the sandwich in parchment before cutting. Holds everything together like a charm.
