Suggested Preparation
For a restaurant-quality roast inspired by the picture, marinate the lamb with olive oil, garlic, fresh rosemary, thyme, salt, and black pepper for at least 2 hours or overnight. Sear the lamb until golden brown, then roast until tender and slightly pink in the centre.
Serve sliced alongside roasted baby potatoes tossed with garlic, herbs, and pan juices. Finish with a sprinkle of fresh parsley for a hearty and elegant meal bursting with flavour.
