Johnny on the prawns
These come out of Shark Bay in Western Australia, one of the best-run prawn fisheries in the world. Big, firm and sweet.
Head on is the point. That's where the flavour is. Thaw them in the fridge overnight, oil, salt, a hot grill, two minutes a side until they curl and go coral. Suck the heads. Everyone who knows does.
3kg is a barbecue's worth, with some left for a pasta later in the week.
