Duck is the bird I would cook if I had to pick one, and it is the one almost nobody buys from me. That is a shame, because a whole duck is easier than a chicken and far harder to ruin.
The fat is the reason. It sits under the skin and bastes the bird for you while it roasts, so you can leave it alone in a low oven for two hours and it will still come out right. Prick the skin, salt it, and put a tray underneath to catch the fat. Keep that fat. Roast potatoes in it and you will understand why I am going on about this.
Three of them because they freeze well and because the second and third are where the price stops mattering. Roast one on Sunday, shred the next one for noodles, and keep the third for the week you cannot face the shops.
