Quick Frozen sustainably harvested Chilean Seabass steaks (Patagonian Toothfish). Skin on ~200g per steak, vacuum sealed packs.
Grill, Sauté, or BBQ, the skin crisps up beautifully, and the plentiful 'good' amino fatty acids keep the fish moist and succulent - very easy to cook, very difficult to overcook.

Glacier 51 Toothfish is Austral Fisheries’ premium super-premium Patagonian Toothfish from Australia’s remote sub-Antarctic fisheries, 4,109 km deep in icy waters.
This snow-white fish has wagyu-like characteristics with a clean, sweet flavour and high Omega-3 content. It’s MSC certified, rated “best choice” by Seafood Watch, and completely carbon neutral under Australia’s Climate Active Program.
