Each Piece is caught, processed, cleaned and individually quick frozen to keep its freshness to its utmost best. Black monkfsh tails are an extremely premium product with amazing texture and buttery taste. Its flesh is almost lobster like giving it the nickname the "poor mans Lobster" but holding its own with its taste and ease to cook.
