Hanger is the piece the butcher used to keep for himself, which tells you most of what you need to know. One per animal. Enormous flavour, loose open grain, and it drinks up a marinade like nothing else in the fridge.
Untrimmed means it arrives the way I see it, with the sinew still running down the middle. Take a knife down either side of it and you have two long strips. That is the only real job and it takes two minutes.
Then cook it hot and fast and slice it thin against the grain. Do not take it past medium rare, it will not forgive you. Put it in the middle of the table with flatbreads and something sharp and watch it disappear.
It is the best steak most people in Hong Kong have never ordered. At $251 for the second one there is no good reason not to find out.
