Burrata meaning 'buttered' in Italian, is a fresh cheese that marries mozzarella and cream in perfect union. Its heart, the stracciatella, is a sumptuous blend of shredded mozzarella and cream, encased by a soft mozzarella shell. As the knife oozes out, heralding a moment of pure delight.

This exquisite delicacy hails from Apulia, more commonly referred to by its Italian name, Puglia, a southern region of Italy. This lush region is a stronghold of cheesemaking, celebrated for its rich dairy farming heritage and the artistry of burrata making. In Puglia, renowned for its rolling hills, sheer cliffs, white medieval towns and endless century-old olive groves, burrata is more than a delicacy, it symbolises the artisanal skill passed down through generations. Burrata is best enjoyed with crusty bread and a drizzle of olive oil or torn and scattered over pasta.
