Chilled Black Angus Ribeye Roast 2.5kg

1. Remove from the refrigerator 4 hours before cooking to allow to get to room temperature
2. Rub salt & Pepper liberally into the roast
3. Roast in the oven at 200C for 40 Minutes, reduce the temp down to 120 degrees for a further 30 minutes
4. Take out of the oven and rest on a tray loosely covered with foil and allow to rest for 20 minutes.
5. Carve in thick slices and serve with Christmas veggies
