Gorgonzola is a straw-white raw cheese, whose green streaks are due to the marbling process, i.e. the formation of mould. Sweet Gorgonzola is creamy and soft with a unique, slightly sharp flavour. The younger, creamier Gorgonzola—in Italian 'dolce' or 'sweet'—is made in the suburbs of Milan and aged at least three months. Its spreadable texture and mild flavor profile make it an ideal cheese for culinary applications.

Sweet & spreadable, this unique blue balances mildness with intensity for a crowd-pleasing bite. Aged 3-4 months.

In 1927, twenty-five year-old Giovanni Ciresa began to collect and mature select cheeses before expanding his reach to mozzarella, yogurts, pecorino, taleggio – and this gorgeous & supple blue. The Cirsesa name and standard of quality thrive on with Gorgonzola Dolce! Gorgonzola is one of the world's oldest blue-veined cheeses, and this recipe is produced west of Milan in Cameri, strictly using old-world traditions. Gorgonzola Dolce is cured for more than 50 days to obtain its nutty aroma and its mild, creamy flavor with a sweet taste. Spreadable, with a consistency akin to cream cheese, it lives up to its Dolce title (meaning “sweet”), delivering mellow complexity in a super-rich texture. For those that believe they don’t do blue, this cheese will create enthusiastic new converts!

Gorgonzola, like Roquefort is an ancient cheese. The recipe was developed as a solution to use up excess milk. In the early fall cows would be led down from their Alpine pastures into the valleys of the Lombardy region. They would stop at the town of Gorgonzola to be milked. Gorgonzola Dolce recipes usually call for Penicillium Glaucum, rather than Penicillium Roqueforti. Glaucum is a milder, fruitier mold with a green hue.
