Frozen Duck Breasts, Vaccum packed, 4 pieces.

Defrost in your freezer over night then score the skin slightly, season well with coarse salt and pepper and sear skin side down to in a hot dry pan for approximately 4 minutes. Flip and cook for 2 minutes on the flesh side, flip back onto the skin and place the pan directly into the oven  (or on a tray if your pan has a plastic handle) and roast in a hot oven (180 Celsius) for approximately 6-8 minutes. Rest the breasts on a cooling rack for 4 – 5 minutes then slice nice and thick.  Be sure to save any fat that rendered out of the skin for roast potatoes!
