如果只能選擇一種家禽來烹調，我會選鴨。
但奇怪的是，幾乎沒有人向我買整隻鴨。這實在有點可惜，因為整隻鴨其實比烤雞更容易處理，而且更不容易失手。
原因就在於那層脂肪。
鴨皮下天然厚實的脂肪層，在烤製過程中會慢慢融化，不斷滋潤肉質，等於替您自動塗抹牛油。所以很多時候您只需要把它放進低溫焗爐兩小時，其他事情交給時間就好。
在鴨皮上輕輕戳洞，均勻灑上鹽，再在下方放一個烤盤接住流出的鴨油。
而最重要的是：
千萬不要把鴨油倒掉。
用它來烤薯仔之後，您就會明白我為什麼一直在說這件事。
之所以一次給您三隻，是因為它們非常適合冷凍保存；也是因為買到第二隻和第三隻時，價格已經變得不再重要。
星期日烤一隻全家享用；下一隻可以手撕做鴨肉湯麵、炒飯或沙律；第三隻就留給那個下班後完全不想去超市的星期。
