每包 4 x180g 急凍黑鱸魚柳。
黑鱸魚柳肉質細嫩油潤,非常美味。連皮魚柳在平底鍋或烤架上烹調可製作出香脆的魚皮。把魚柳放進雪櫃解凍一夜,第二日便可烤、焗或蒸。

材料
- 1/4杯 特級初榨橄欖油
- 3湯匙 鮮榨檸檬汁
- 少許 百里香或奧勒岡
- 2瓣 蒜頭,壓碎
- 1/8茶匙 即磨胡椒粉
- 4塊 連皮黑鱸魚柳
- 少許 粗鹽
- 香蔥,切成3-4寸長,點綴用(可自行選擇)
- 檸檬角,點綴用(可自行選擇)
煮法
將油、檸檬汁、百里香或奧勒岡、蒜頭和胡椒混合在一個大的淺碗中。將醃料均勻地塗上魚柳,然後反轉另一面,同做;蓋上保鮮紙,放入雪櫃30分鐘。
以中高溫加熱烤架或烤盤。從醃料中取出魚柳,倒去多餘水份。放在烤架上,魚皮朝下,用鹽調味。烤至魚皮呈淺金黃色並開始脆身。小心反轉魚柳,煮至完全變成金黃色並熟透(中間不透明),大概需時5-6分鐘。根據個人喜好以香蔥和檸檬角點綴,趁熱或在室溫下享用。

Grilled Seabass Recipe
Ingredients
1/4 cup extra-virgin olive oil
3 tablespoons freshly squeezed lemon juice
Few sprigs thyme or oregano
2 garlic cloves, smashed.
1/8 teaspoon freshly ground pepper
4 black seabass fillets, skin on (about 6 ounces each)
Coarse salt
Fresh chives, cut into 3/4-inch lengths, for garnish (optional)
Lemon wedges, for garnish (optional)
Instructions
Combine oil, lemon juice, thyme or oregano, garlic, and pepper in a large shallow bowl. Add fish to marinade, and turn to coat; cover with plastic wrap, and place in the refrigerator 30 minutes.
Heat a grill or grill pan over medium-high heat. Remove fish from marinade, letting excess drip off. Place on grill, skin side down, and season with salt. Grill until skin is lightly browned and starting to crisp. Carefully turn fillets and cook until well browned and cooked through (center will be opaque), 5 to 6 minutes. Garnish with chives and lemon wedges, if desired. Serve hot or at room temperature.
