我哋嘅 和牛威靈頓牛排(Wagyu Beef Wellington),選用 和牛牛柳 為核心,裹入蘑菇蓉同調味煙肉,再以酥皮包裹。牛肉經 低溫慢煮 至三成熟,每次品嚐都保證完美。
煮食貼士
解凍
放喺雪櫃過夜解凍,然後取出室溫回溫約 2小時預熱
將烤盤放入焗爐,預熱至 200°C準備
烹煮前 10分鐘,將威靈頓從包裝袋同烘焙紙中取出烘烤
將威靈頓放上已預熱嘅烤盤,焗 16分鐘靜置
出爐後放上蛋糕架靜置 15分鐘
(如需更熟效果,可延長靜置時間)回烤
放回焗爐再焗 5分鐘享用
用鋸齒刀切成 4件 上碟

The tenderloin is lean, tender and versatile and can be cooked on the skillet or bbq as well as in a stir fry. This cut is best served rare or medium-rare as it can become dry and lose flavour when cooked beyond medium.

Learn About the Australian Wagyu Grading System
In Australia, wagyu beef is graded from M0 to M9+ which relates to the degree of marbling the meat contains. Marbling refers to the tiny specs of fat interspersed throughout the lean sections of meat. Generally speaking, the more marbling a cut contains, the higher quality it is considered to be. In Australia, a pro grader measures the quality and gives it a score from 0 - 9+ so you know exactly how much marbling your cut will contain.
Defrost in your fridge overnight then allow to get to room temperature for approximately 2 hours
• Preheat oven to 200c with tray in the oven getting hot
• Remove from bag and baking paper, 10 mins before cooking
• Place wellington on hot tray and bake for 16 mins
• Once baked, rest on cake rack for 15 mins (longer resting for more well done)
• Place back in oven for 5 mins
• Serve by slicing it using a serated knife into 4 pieces
