Appellation 岩蠔嘅海水鹹度較高，呢個係由多個因素造成。Merimbula 湖係一個狹窄嘅河口湖，受惠於強勁嘅自然水流，海水不斷被推入蠔嘅生長區域，令 Merimbula 湖全年保持高鹽度，接近太平洋海水嘅水平。Appellation 岩蠔嘅奶油感亦非常豐富，喺秋季到春季（3月至10月）期間最為突出。
