    乾式熟成牛肉係指喺受控嘅開放空氣環境中儲存嘅牛肉。呢個過程會令天然酵素分解肌肉纖維,令牛肉更加嫩滑,味道更加濃郁。

    呢個過程會提升牛肉味道嘅複雜性,令佢有獨特嘅堅果香味,唔少人都覺得比起普通牛肉更加滋味。

    點樣煮乾式熟成牛扒?

    煮乾式熟成牛扒嘅方法同煮普通牛扒差唔多,但要記住以下幾點:先將牛扒回溫至室溫,煮之前要調味,先用高溫封煎,再轉中火煮,經常翻轉,上碟後要靜置一陣先食。

    在美國,牛肉有兩種評級方式:

    1. 以柔嫩度(tenderness)、多汁性(juiciness)和風味(flavor)作品質分級
    2. 以屠體上可用的瘦肉量作產量分級

    極佳級(PRIME)牛肉是產自餵養良好的年輕牛隻。有豐富的大理石油花,一般在餐廳和酒店出售。極佳級牛肉無論如何煎、燒、烤都非常適合!

    特選級(CHOICE)
    牛肉品質高,只是大理石油花比 Prime 少。特選級牛肉相當軟嫩、多汁且味道鮮美,適合各種燒烤烹調方式。沒那麼嫩的切塊則適合燉煮、燒烤或慢煮。

    可選級(SELECT)
    牛肉通常比極佳級或特選級牛肉瘦一些。它相當嫩,但油花較少。可選級牛肉適合燒烤,也適合醃製或燉煮。
