The finest Lamb from Australia, fed on organic grain and grass for 100 days to give this lamb a marble score of 3-5 (the wagyu of lamb). Juicy, tender, and flavorsome. We have dry-aged the whole lamb shortloin to 14 days which gives it a nutty flavour with less gaminess. We marinate the chops in our special blend or greek herbs and spices, lemon juice, oregano, garlic and crumbled fetta cheese.
