The Barnsley Chop is a double-cut loin chop with the bone in the middle. We have dry-aged them for 14 days before blast freezing them. Dry aging gives the meat a nutty and less gamey flavour. Cooking lamb on the bone always makes the finished product more falvourful and juicy

This is the premium brand from Western Australia, the young lambs are pasture-raised on the fertile, organic, lush paddocks of Western Australia. The meat is subtle in flavor and super soft in texture which in our opinion makes for the best lamb on the market.

Chefs Tip: Take these Barnsley Chop and marinate them in our Mediterranean Marinade for a couple of hours then grill on the bbq. The sauce creates a crust, protecting the delicate meat inside, and the feta cheese crisps up becoming crunchy in texture.
