We will DRY AGE for 30 days, the whole piece, then trim, portion, and vacuum pack

**Please Note** after aging and trimming there will be approximately a 20 - 25% weight loss. Your 4.5kg pre-aged piece pre-aging weighs closer to 3.5kg after the aging process.
