French Duck Breast 370g X 2
Free range duck breast, individually vacuum packaged and blast frozen. Defrost in your freezer over night then score the skin slightly, season well with coarse salt and pepper and sear skin side down to in a hot dry pan for approximately 4 minutes. Flip and cook for 2 minutes on the flesh side, flip back onto the skin and place the pan directly into the oven (or on a tray if your pan has a plastic handle) and roast in a hot oven (180 Celsius) for approximately 6-8 minutes. Rest the breasts on a cooling rack for 4 – 5 minutes then slice nice and thick. Be sure to save any fat that rendered out of the skin for roast potatoes!
